Simple One-Pot Fish Stew

Ingredients:

  • 6 Fresh or Frozen Fish Fillets (Mix of Cod, Salmon etc, your choice)

  • 1 Garlic Clove

  • 1 Tinned Sweetcorn (We used the Brine too)

  • 125 g Frozen Prawns

  • 226 g Tinned Tomato Soup

  • 4 Large Tomatoes

  • Several Drops of Tabasco Sauce

  • Sliced French Baguette

  • 30 g Butter

  • 3 Tbsp Chopped Chives

Method:

1. Pre-heat the oven to 180℃ (350℉)

2. Chop the Fish into small cubes

3. Crush and thinly chop the garlic.

4. Chop the tomatoes.

5. Throw in the garlic, sweetcorn (+brine), prawns, canned tomato, and tabasco into a casserole dish.

6. Slice the Baguette and butter on one side and sprinkle with chives.

7. Arrange the bread onto the tip of the mixture.

8. Bake in the oven for ~20 minutes, keeping an eye on not burning the bread.

9. Dig in and enjoy.

We found that preparing the mixture the day before intensifies the flavour of the dish. As all the ingredients are soaked up and the bread absorbs all of the wonderful flavours from the dish.

This one can be easy altered to the ingredients of your fancy.
