Homemade Nando's

The recipe below will create an inspired Nando’s meal of a ‘Butterfly Chicken Breast’ with accompanying Macho Peas, Coleslaw, Fries and Boiled Potatoes.

Ingredients:

  • Chicken Breast (you can use a chicken leg or thigh, Note: the cooking time will vary).

  • Fresh Potatoes

  • Tabasco Sauce (if a spice lover)

  • Olive Oil

  • Frozen Peas

  • Red & Green Cabbage

  • Carrot

  • Lemon or Lime juice

  • Dijon Mustard

  • Salt & Pepper

Optional:

  • Quark (or plain yoghurt of choice)

  • Butter

Method:

  1. Preheat the oven to ~200°C/390℉ (~180°C Fan Oven).

  2. Slice the chicken breast horizontally to create that ‘butterfly breast’ look this will even out & speed up the cooking time.

  3. Marinade the chicken with tabasco sauce, olive-oil, lemon or lime juice, salt & pepper and allow to soak in the flavours whilst the oven pre-heats.

  4. Place onto a baking tray and bake in the oven for ~20 mins. (Tip: A digital thermometer - make sure the thickest part of the chicken is at least 75°C.

  5. Chop up the potatoes into wedges or to your desired ‘fries’ size. (Tip: To speed up the cooking time microwave first for 2-3 minutes, this will create crispy fries and reduces the time in the oven. Season with olive-oil, salt & pepper and place into an oven roasting dish into the oven.

  6. Prepare the coleslaw - wash the cabbage & carrot, cutting off the carrot ends (peel if you prefer), Finely slice the cabbage, place into a mixing bowl along with the grated carrot. Mix the ingredients together with 1-2 tsp of dijon mustard, salt & pepper. (To generate a creamier consistency use 1-2 tbsp of Quark).

  7. Boil up a small pan with salted water, throw in the peas for 3-4 minutes (or as guided on the back of the packet). Drain and place into a small bow, mash with a fork- & mix in Quark and/or 1 tsp of butter to help with the mixture season with salt & pepper. Plate up

  8. Once the potatoes have crisped up golden brown, serve up and season them with salt & pepper.

  9. Once the chicken has browned up & cooked completely through (inside temp at should be least 75°C at the thickest part of the breast). Remove from the oven and plate up.

  10. Plate up everything and enjoy your homemade Nando's.
